SugarSmart recipe – Tasty salmon on squash noodles

Tasty salmon on squash noodles for 2 persons

A SugarSmart recipe means a recipe consisting of only basic ingredients with no supplements of refined carbohydrates and with limited amounts of naturel ingredients that are rich in starch or sugar. Consuming meals based on SugarSmart recipes means no significant change in blood sugar level.
Being SugarSmart means being able to differentiate between basic foods, carbohydrate supplements and sweet treats – and selecting them based on individual needs.


11 oz of salmon fillet
2 squash
Juice from ½ a lemon
1 tsp chili flakes
2 tsp butter
2 cloves of garlic, finely chopped
Salt and freshly ground pepper

  1. Preheat oven to 390 F
  2. Put the salmon in a greased ovenproof casserole
  3. Sprinkle the salmon with salt, pepper and, chili flakes if you like chili
  4. Cook the salmon in the oven for app. 15 minutes, until cooked thoroughly
  5. Make strips of squash with a spiralizer, julienne cutter or use a potato peeler to make the ultra-thin noodles
  6. Melt the butter on a pan and add the garlic and chili
  7. Add the squash and let it sauté for a couple of minutes
  8. Serve the warm squash noodles with the salmon and a bit of lemon juice
  9. Season with salt and pepper
  10. Add a cabbage salad on the side

If you – or family members – prefer supplements of carbohydrates, whole grain pasta is recommended on the side.
