Creamy cabbage stew for 4 people

A SugarSmart recipe means a recipe consisting of only basic ingredients with no supplements of refined carbohydrates and with limited amounts of naturel ingredients that are rich in starch or sugar. Consuming meals based on SugarSmart recipes means no significant change in blood sugar level.
Being SugarSmart means being able to differentiate between basic foods, carbohydrate supplements and sweet treats – and selecting them based on individual needs.
1 large cauliflower
2 onions, peeled and cut into quarters
1 large pointed cabbage, cut into quarters (the stick is roughly cut and boiled with the cauliflower. If you cannot get pointed cabbage, you can use white cabbage)
2.5 oz. unsalted butter
The shell of half an organic lemon cut in thin strips
½ tsp of nutmeg
Salt and freshly ground pepper
- Cut cauliflower into bouquets and it’s stick into slices. Put it in a pot and add the onions
- Add the stick from the pointed cabbage
- Add water to the pot so it reaches half of the ingredients. Cook for 10-12 minutes or until tender
- Pour off the water and blend the cauliflower with half the butter to a completely smooth purée
- Steam the leaves from the pointed cabbage in the rest of the butter
- Add the lemon strips and stream until the cabbage begins to collapse
- Remove the lemon strips and add the puree of cauliflower
- Cook the ingredients well
- Season with salt, pepper and nutmeg
- Serve the stewed cabbage with minced beef, meatballs or falafel.
